put sliced onions on top (allowed amount)
sprinkled LIGHTLY with cinnamon and cumin

covered baking dish and baked at 375 for 30min, and then 275/300 for 30min

OMG! THE CHICKEN WAS SOOOO TENDER AND JUST MASHED UP AND WAS SPICY AND WARM AND FILLING!!!!

CRAB CAKES

Crab cakes – 100g crab, salt, pepper, old bay, 2 plain melba toasts crushed to a powder, 1 TBSP milk. Makes two cakes. Bake in a glass pyrex dish for 10-15 minutes. Crab is already cooked, so it’s just to get it all warm. YUMMY!

Place washed asparagus on grill,
squeeze fresh lemon juice over asparagus
sprinkle with garlic power and pepper
Grill for approx. 4 minutes

STRAWBERRY SORBET

This is my absolute favorite recipe! My whole family loves it!

Allotted amount of strawberries
Juice of 1 lemon
Stevia (as needed)
Water (if needed)
Freeze fresh strawberries about 1 hour.
Blend fresh frozen strawberries, lemon juice & sugar substitute in blender until very well blended.
You can serve immediately or place in freezer to allow it to firm up even further.
TIP: If you don’t want to wait, you can always use your fresh strawberries without freezing them and simply add ice any water needed.

Italian Chicken Soup
Enough for 2 meals..

2 handsfuls of Fresh spinach Chopped a bit (not too finely, just run the knfe through the leaves a few times)
7 oz chicken breasts, cut into small pieces
2 C. water
Salt
Garlic powder – to taste
1/2 tsp. Black Pepper
1 tsp. Italian Seasonings
1 or 2 teaspoons of ACV

In a nonstick pot add a few tablespoons of water and heat, then add spinach to wilt it, add a little salt/garlic powder to this. Then add the chicken and cook until done. Add the 2 cups water and italian seasonings, black pepper. You can adjust the garlic to taste. Add the Apple Cider Vinegar – vinegar will bring out more flavor in the broth.

Simmer for 35 or so minutes and serve. You can add a bit more water .. the broth will be very flavorful.

This is something I did on Atkins quite a bit, and even served when I wasn’t on a diet because it was just so yummy. It’s a bit like Italian wedding soup, only no pasta!

when onion is mostly cooked, add fish to pan, when fish is mostly cooked add 1/2 chopped apple, rest of the apple chopped and had cold on the side with cinnamon…

Cucumber “coleslaw”

In food processor –
allowed amount of cucumber
5-6 drops Orange stevia

Sweet pickles
Try this: 1 Tablespoon Organic Apple Cider Vinegar, juice of 1/2 lemon, 8 drops of liquid Stevia ORANGE FLAVOR, pepper. Marinade the cucumber in this 10 minutes. The cucumber comes out tasting like a butter pickle – sweet and tangy. ~ Linda
