Today, as I was preparing my lunch, I thought to myself, I’ve come a LONG way! I’m not talking about the loss of weight or inches but how I take the time to prepare my meals and my family’s meals. I enjoy it and have learned a lot. I used to be a “fast food” type of cook, where if it was quick and easy that was my kind of dish or I would just simply order take out. My mentality has changed; I enjoy preparing healthy food and feel better about myself for doing it.
Before starting this diet, I never touched a raw radish, I now boil them in a cup of homemade chicken base… prepared like that they are now one of my favorite vegetables. When the radishes are prepared like that they taste just like baby red potatoes that came out of stew. YUM! I didn’t lose anything, but I didn’t gain and I’m not going to dwell on it.

YAY! One of the biggest things I want to get out of this (besides weight loss) is a better mind set. I am on Day 2, but your comment here is encouraging! Thank you Jodi, I have to say I am feeling great, who would have thought on 500 calories a day. I had my first day with no loss, at a standstill, I hope the scale changes tomorrow. I know people say, when you don’t lose or stall, it’s your body catching up but it still a tough little pill to swallow. I will definitely check out your blog!!!
